Description
The millefeuille (also known as a Napoleon in the United States) is one of the most technically demanding pastries in French baking, and one of the most rewarding to eat when done right. Ours starts with scratch-made puff pastry: dozens of thin, butter-laminated layers that shatter crisply when you cut through them. Between each layer sits a smooth, rich vanilla cream that is firm enough to hold its shape and delicate enough to melt on the tongue.
At Sugar Rush, Mireya trained in classical French and Italian pastry techniques, and the millefeuille is one of her signatures. Every element, the pastry layers, the cream, the balance between crunch and richness, is made from scratch in our West Valley City kitchen.
