Description
Quesillo is Venezuela’s version of flan, and while it shares DNA with the French crème caramel and the Spanish flan, it has its own character entirely. Made with condensed milk, whole eggs, and vanilla, Venezuelan quesillo is richer and denser than its relatives, the condensed milk gives it a deeper sweetness, and the higher egg ratio creates a texture that’s firm enough to slice cleanly but melts completely on the tongue.
The caramel on top is made separately and coats the entire bottom of the mold, inverting to become a glossy, bittersweet topping when served. The contrast between the rich, sweet custard and the slightly bitter caramel is what makes it so addictive.
Mireya makes quesillo using her family’s traditional method, no shortcuts, no shortcuts on time. It’s baked in a water bath to achieve that signature silky texture, then chilled and sliced to order.
